Homemade Cajun Seasoning Mix


Making your own Seasoning Mixes are easy to make and you get to control the SALT intake!! 

They make great gifts for Christmas. Package them in pretty little jars with a ribbon, a list of ingredients and lots of love.  




INGREDIENTS
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp dried oregano
1 tbsp dried basil
1/2 tbsp dried thyme
1/2 tbsp black pepper
3 tbsp sweet paprika
1/4-1/2 tsp cayenne pepper
1 tsp celery salt
1 tbsp salt

DIRECTIONS

Mix together well.

Pour into a small jar and attach with a ribbon a gift card.
Use Cajun Seasoning Mix with Chicken, Pork, Seafood, Steak and Veggies.

Easy Delious Crock Pot Chuck Roast

1 chuck roast. Place roast in crock pot.-- 
Sprinkle roast with Hidden Valley Ranch Dressing.
Sprinkle McCormick AuJus mix on top.
Place a stick of butter on top of seasoned roast.
Put about 5 pepperoncini peppers on top.
.
Do NOT add water - it will dilute the flavor.
Cook in crock pot on LOW for about 8 hours

Crockpot Creole Smothered Steak



Ingredients -
  • 1 1/2 lbs of veal cutlet / beef cubed steak
  • 1/2 cup of all purpose flour
  • Pepper to taste
  • 2- 3 tablespoons of canola oil
  • 1 medium green pepper, chopped
  • 1 medium purple onion, chopped 
  • 1 stalk celery, chopped
  • 1 can fire roasted diced tomatoes
  • 1 tablespoon of tomato paste
  • 1 teaspoon teaspoon herbs de province
  • 1 bay leaf
  • 1/4 to 1/2 teaspoon of Slap Ya Momma (mild)
  • 1 can of Coca-Cola Classic
Instructions -

Cut meat into serving size pieces. Salt & pepper and lightly flour. Cook lightly on both sides only a few minutes in skillet and remove to crockpot.  Light sauté onion, bell pepper & celery.  Add TB tomato paste - browning for about 30 seconds on the side in skillet (to a mud color)  Add the fire roasted diced tomatoes (undrained), coke, slap ya momma seasoning, herbs de province, bay leaf.. bring to light boil then pour over meat in crockpot.

Cook on high for 2 - 3 hours  until tender. Don't cook to long or will turn to mush.

Serve over cooked rice

Ingredients
  • 1 1/2 lbs ground beef
  • 1 onion, chopped fine
  • 1 28 oz can tomatoes
  • 2 cups water
  • 3 cans consomme
  • 1 can tomato soup
  • 4 carrots, chopped
  • 1 bay leaf
  • 3 sticks celery, chopped
  • parsley
  • 1/2 tsp thyme
  • pepper to taste
  • 8 Tbsp barley
Instructions
  1. Brown meat and onions. Drain well.
  2. Combine all ingredients in large pot, simmer covered at least 2 hours, or all day!

Crock-pot Chicken Pot Pie

I had no idea this recipe would turn out so delicious.  I was low on groceries and wanted to cook a easy recipe in my crock-pot. I threw this together and it is now a huge family hit!!

Crockpot Chicken Pot Pie
1 large pkg of frozen chicken tenderloins
1 large can of Cream of Chicken
1 can Rotel (drained)
Season to taste
Cook 2 hours on high in crockpot or until chicken is done
Add:
2 Potatoes (diced) - cook until tender
Add 1 can peas & carrots (drained)
Cook for 30 minutes on low -- serve over bread - eat.. yum!!

Serves 8

Ham, Swiss and Spinach Quiche

Ham, Swiss and Spinach Quiche

Prepare a warm, filling Ham, Swiss and Spinach Quiche for a breakfast dish that the whole family is sure to love.           

Ingredients

3 cups packed baby spinach, chopped
6 large eggs, lightly beaten
1 1/2 cups half and half
1/2 teaspoon salt
1 9-inch frozen pie crust
1/4 pound sliced ham, chopped
1 1/2 cups shredded Swiss cheese

Preparation

Line a rimmed baking sheet with foil, place it in oven and preheat to 375°F. Mist a medium skillet with cooking spray and warm it over medium heat. Cook spinach, stirring often, until wilted. Remove spinach to a paper towel-lined plate and pat dry.

Combine eggs, half and half and salt in a large bowl and whisk until well mixed. Arrange spinach on bottom of pie crust. Scatter ham over spinach. Sprinkle cheese over ham. Pour egg mixture into shell.
Place quiche on baking sheet and bake until filling is set and crust is golden, about 40 minutes. Let stand 10 minutes, slice into wedges, and serve hot.

Slow Cooker Baby Back Ribs

Incredible moist and tender Ribs. This is a very easy crock-pot recipe -- a big hit at my house!! Super easy and works perfect every time! I really doubted this recipe but it actually turns the ribs slightly crispy outside and SUPER tender inside. I lightly brush them with BBQ sauce but only because we like BBQ sauce, not because it needs it.



ingredients

Rub
3/4 teaspoon black pepper
3/4 teaspoon white pepper
1/2 teaspoon cayenne pepper
1 1/2 teaspoon chili powder
1 teaspoon ground cumin
1/3 cup dark brown sugar
3/4 teaspoon ground oregano
1 tablespoon paprika
1 1/2 teaspoon salt
1/4 teaspoon sugar
***
4 pounds baby back ribs
1/4 cup barbecue sauce
 

directions

Combine rub ingredients; mix well. Rub on all sides of ribs. Place ribs upright, meaty side out in 6 qt crockpot. Cover; cook on low for 7-8 hours, or on high for 3 to 3 1/2 hrs.

Remove ribs from crockpot. Brush with bbq sauce. Serve with additional bbq sauce.
