Baked Spaghetti


 

 

 

 

 

 

 

 

 

 

 

Ingredients


  • 2 pounds ground beef
  • 2 medium onions, chopped
  • 2 cans (one 15 ounces, one 8 ounces) tomato sauce
  • 1 can (8 ounces) sliced mushrooms, drained
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 2 packages (7 ounces each) uncooked spaghetti
  • 1 package (8 ounces) cream cheese, softened
  • 2 cups (16 ounces) 4% cottage cheese
  • 1/2 cup sour cream
  • 2 tablespoons minced chives
  • 1/4 cup dry bread crumbs
  • 1-1/2 teaspoons butter, melted

Directions

  • In a large skillet, cook beef and onions over medium heat until meat is no longer pink; drain. Add the tomato sauce, mushrooms, garlic powder and oregano. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes, stirring occasionally.
  • Meanwhile, cook the spaghetti according to package directions; drain. In a small bowl, combine the cream cheese, cottage cheese, sour cream and chives; beat well. Place half of spaghetti in a greased 4-qt. baking dish. Spoon cream cheese mixture evenly over top. Layer with remaining spaghetti and all of the beef mixture.
Toss bread crumbs and butter; sprinkle over the top. Cover and bake at 350° for 20 minutes. Uncover; bake 5-10 minutes longer until heated through. Yield: 12 servings.

Couscous Cakes

 

Ingredients

  • 2 cups cooked couscous, prepared according to package instructions and cooled
  • 1/4 cup chopped fresh cilantro leaves
  • 1 egg
  • 1 egg yolk
  • 1 1/2 teaspoons ground coriander
  • 1 lemon, zested
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons all-purpose flour
  • 1/4 cup olive oil
  • 1/3 cup mild mango chutney

Directions

In a medium bowl, mix together the couscous, cilantro, egg, egg yolk, coriander, lemon zest, salt and pepper. Sprinkle the flour over the mixture. Mix until combined.
In a large nonstick skillet, heat the oil over medium heat. Form 1/4 cupfuls of the mixture into 8 patties. Add 4 of the patties to the pan and cook for 3 to 4 minutes each side until golden. Drain on paper towels. Repeat with the remaining couscous mixture.

Serve the couscous cakes with mango chutney.

Greek Seasoning

Blend Spice Mix Recipe

Can't find Greek seasoning at the grocery store? Watkins came up with their own rendition of the ethnic blend.

Ingredients

2 tsp Coarse Sea Salt
2 tsp Oregano
1 1/2 tsp Onion Powder
1 1/2 tsp Garlic Powder
1 tsp cornstarch
1/2 tsp Ground Nutmeg
1/2 tsp Purest Ground Cinnamon
1 tsp Beef Soup & Gravy
1 tsp Black Pepper
1 tsp Parsley 
 

Directions:

Combine all ingredients and store in an air tight container.
