Homemade Cajun Seasoning Mix


Making your own Seasoning Mixes are easy to make and you get to control the SALT intake!! 

They make great gifts for Christmas. Package them in pretty little jars with a ribbon, a list of ingredients and lots of love.  




INGREDIENTS
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp dried oregano
1 tbsp dried basil
1/2 tbsp dried thyme
1/2 tbsp black pepper
3 tbsp sweet paprika
1/4-1/2 tsp cayenne pepper
1 tsp celery salt
1 tbsp salt

DIRECTIONS

Mix together well.

Pour into a small jar and attach with a ribbon a gift card.
Use Cajun Seasoning Mix with Chicken, Pork, Seafood, Steak and Veggies.

Cajun Jambalaya

1 tablespoons extra virgin olive oil...
1 1⁄2 lbs boneless skinless chicken thighs
1 lb andouille sausage, cut into 1/4 inch slices
1 large onion, chopped
2 celery ribs, diced
1⁄2 green bell pepper, diced
1⁄2 red bell pepper, diced
1⁄2 teaspoon dried thyme
1⁄4 teaspoon dried oregano
1⁄4 teaspoon sweet paprika
1⁄2 teaspoon salt
1⁄4-1⁄2 teaspoon cayenne pepper (optional)
1 1⁄2 cups long grain rice
1 (14 ounce) can tomatoes, chopped,with juice
2 cups chicken broth or 2 cups stock
8 ounces medium shrimp, peeled and devein
2 tablespoons chopped fresh parsley
3 green onions, finely chopped

I add extra meat and season to taste  


DIRECTIONS

Preheat oven to 350 degrees F.
In a large pan or Dutch oven, brown chicken in hot oil on both sides; remove and drain.
Add andouille, onion, celery, bell pepper, thyme, oregano, paprika, salt, and cayenne pepper to the pan, cooking and stirring for about 5 minutes until onions are tender.
Add rice, tomatoes with juice, and broth; bring to a boil.
Place rice mixture in a baking dish or oven-proof casserole; top with chicken; cover (can use foil) and bake at 350 degrees F for 40-45 minutes or until rice and chicken are done and tender.
Stir in shrimp, parsley, and green onions; cover and cook 5-8 minutes longer or until shrimp curl and turn bright pink and serve.

The Best Jalapeno Cheddar Cornbread



Want to try some incredible southern cornbread? Here it is...  so yummie! This cornbread is the best. Spicy jalapenos and cheddar cheese add so much flavor it's ridiculous. If you love spicy and cheesy, you gotta try it!


Ingredients:

  • all-purpose flour - 3 cups
  • cornmeal - 1 cup
  • sugar - ¼ cup
  • baking powder - 2 tbsp
  • salt - 1 tsp
  • milk - 1 cup
  • beer - 1 cup
  • eggs - 3, beaten
  • butter - 1 cup (227g), melted
  • cheddar cheese - 8 ounces (200 g), grated
  • jalapenos - 3 – 4 tbsp - pickled, roughly chopped

Instructions:

  • In a large bowl, sift the dry ingredients together.
  • In a separate bowl, mix together the wet ingredients (including the jalapenos).
  • Quickly add the wet mix to the dry, and stir until the batter is almost smooth. (it will be very thick)
  • Heat the oven to 425 F (200 C), and let the batter rest while the oven is heating.
  • Grease your pan or skillet with butter, scrape in the dough, and smooth the top.
  • Bake for about 30 minutes, or until golden brown, and a toothpick comes out clean.
(be sure and do the toothpick test, even though it can appear done on the outside, it’s very important that it’s cooked through).

Rice-Stuffed Peppers

Rice-Stuffed Peppers Recipe Fix this wonderful, easy dish when you have company. The cheese sauce sets these stuffed peppers apart from any others I've tried.

2 pounds ground beef
1 medium onion, chopped
1 small green pepper, chopped
2 garlic cloves, minced
1-1/2 teaspoons salt
1/2 teaspoon pepper
3-3/4 cup
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (10 ounces) diced tomatoes and green chilies, undrained
1 can (15 ounces) tomato sauce
1 tablespoon ground cumin
3 cups uncooked instant rice
4 medium green peppers

CHEESE SAUCE: 
1-1/2 pounds process American cheese, cubed 
1 can (10 ounces) diced tomatoes and green chilies, undrained

Directions

In a Dutch oven, cook beef, onion, green pepper, garlic, salt and pepper over medium heat until beef is no longer pink; drain. Add the water, tomatoes, tomato sauce and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes.  
 
Stir in rice; simmer, uncovered, for 5 minutes. Remove from the heat; cover and let stand for 5 minutes.  
 
Remove tops and seeds from the peppers; cut in half widthwise. Place in a large pan of boiling water; boil for 4 minutes. 
 
Drain peppers and stuff with meat mixture. Place remaining meat mixture in an ungreased 13-in. x 9-in. baking dish; top with stuffed peppers, pressing down gently. Cover and bake at 350° for 1 hour. In a saucepan, heat sauce ingredients until cheese is melted. Serve over peppers.
 
Yield: 8 servings.

Greek Seasoning

Blend Spice Mix Recipe

Can't find Greek seasoning at the grocery store? Watkins came up with their own rendition of the ethnic blend.

Ingredients

2 tsp Coarse Sea Salt
2 tsp Oregano
1 1/2 tsp Onion Powder
1 1/2 tsp Garlic Powder
1 tsp cornstarch
1/2 tsp Ground Nutmeg
1/2 tsp Purest Ground Cinnamon
1 tsp Beef Soup & Gravy
1 tsp Black Pepper
1 tsp Parsley 
 

Directions:

Combine all ingredients and store in an air tight container.
