Slow Cooker Salisbury Steak
Have you tried this?? Ohhh I can't wait to cook this recipe for my family!!
Serves: 6 servings
Ingredients
- 6 oz sliced mushrooms
- ½ onion, sliced
- 1½ cups beef broth (low sodium)
- 1oz package brown gravy mix (dry)
- 2 tablespoons ketchup
- 1 teaspoon dijon
- 2 tablespoons fresh parsley
- 2 tablespoons corn starch
- 4 tablespoons water
Beef Patties
- 1½ lbs lean ground beef
- 1 egg yolk
- ¼ cup minced onion
- ⅓ cup Panko bread crumbs
- 3 tablespoons milk
- 1 clove garlic
- salt & pepper to taste
Instructions
- Place mushrooms & onions in the bottom of your slow cooker.
- Combine beef patty ingredients and form 6 patties. Brown over medium high heat (about 3 minutes per side).
- Layer beef patties over mushrooms. Combine remaining ingredients except water and cornstarch. Pour over beef and cook on low 5 hours.
- Once cooked, remove patties and set aside.
- Turn slow cooker onto high. Combine cold water and cornstarch. Stir into the broth and let cook a few minutes until thickened. Add beef back into the sauce to coat.
- Serve over mashed potatoes or rice.
No Bean Low Carb Chili

No bean low carb chili is easy to make. Just take out the beans and add a bit more meat. Can be made mild or turn up the heat with more hot chili peppers.

Ingredients
3 cups water
1 ½ lbs. ground beef
¼ teaspoon cinnamon
¾ teaspoon cumin
¼ cup onion, chopped
1 teaspoon Worcestershire sauce
2 cloves garlic, minced
1 ½ teaspoons salt
2 tablespoons chili powder
¾ teaspoon black pepper
½ teaspoon red pepper
½ teaspoon allspice
1 can tomato paste, 6 ounce
3 bay leaves
1 can can black olives, 2.25 oz, sliced
¼ cup chili peppers, finely chopped
Instructions
- Brown ground beef in large pot and drain out fat.
- Add remaining ingredients, bring to a boil, then simmer about 2 hours.
Prep Time: 5 minutes
Cook Time: 2 hours
Total Time: 2 hours, 5 minutes
Makes 6 servings
Carbs per serving: about 5g

Chicken Chili Recipe
This recipe comes from Capper's Farmer magazine.
Ingredients:
• 2 cans (15 ounces each) kidney or black beans, rinsed and drained• 1 pint diced tomatoes, or 1 can (14-1⁄2 ounces), undrained
• 2 teaspoons chicken base or bouillon
• 1⁄2 teaspoon garlic powder
• 1⁄2 teaspoon ground cumin
• 1 can (4 ounces) chopped green chilies
• 1⁄4 cup diced red or green bell peppers
• 1 cup frozen corn kernels, optional
• 2 cups cooked, cubed chicken
• 1 teaspoon chili powder, or to taste
• Hot sauce, optional
Instructions:
1. Place all ingredients in a slow cooker, and stir to combine.2. Cover and cook on high for 3 to 5 hours, or on low for 5 to 7 hours.

Crock-pot Chicken Pot Pie
I had no idea this recipe would turn out so delicious. I was low on groceries and wanted to cook a easy recipe in my crock-pot. I threw this together and it is now a huge family hit!!
Crockpot Chicken Pot Pie
1 large pkg of frozen chicken tenderloins
1 large can of Cream of Chicken
1 can Rotel (drained)
Season to taste
Cook 2 hours on high in crockpot or until chicken is done
Add:
2 Potatoes (diced) - cook until tender
Add 1 can peas & carrots (drained)
Cook for 30 minutes on low -- serve over bread - eat.. yum!!

Baked Chicken Stuffed with Pesto and Cheese
Low-Carb, Gluten-Free
This is an awesome recipe and easy to make.. Taste as if it took long hours in the kitchen. (:Enjoy!!

Use very large chicken breasts for this and
then pound the heck out of them until they're as thin as you can possibly get
them!
Mix together pesto, sour cream, and grated
mozzarella to make the stuffing. (If you use commercial pesto, it will probably
be darker green than my homemade Basil Pesto with Lemon because I like it creamy.)
Spread a thin layer of the stuffing mixture
over each chicken breast, stopping about 1/2 inch away from the edge.
Then roll up the chicken breasts and use
toothpicks to keep them together. (Don't worry if they look a bit messy like my
one in the back!)
Prepare two bowls, one with beaten eggs and the
other with a mixture of parmesan and almond flour. (I used two eggs, but I
think you could get by with one.)
Dip the chicken breasts first in the egg and
then in the parmesan-almond flour mixture, patting it on so the chicken breasts
are well coated. Place them in a sprayed casserole dish.
Bake at 375F/190C until the chicken is firm to
the touch and slightly browned. I started checking at 30 minutes when they
looked like this.
And I ended up leaving them in for 5 more
minutes until they looked like this. Be careful not to overcook though, or the
chicken will dry out. Serve hot.

(Makes two servings, but recipe can easily be doubled or tripled.

Ingredients:
2 large boneless, skinless chicken breasts
2 T Basil Pesto with Lemon or your favorite commercial pesto
2 T low-fat sour cream
2 T grated mozzarella cheese
(I used heaping tablespoons of pesto, sour cream and cheese)
2 eggs, beaten (or if they're large eggs one will probably be enough)
3 T finely grated Parmesan cheese
3 T almond flour (or almond meal, but almond flour is better for this because it's more finely ground)
black pepper to taste
Instructions:
Preheat oven to 375F/190C. Spray a small
casserole dish with non-stick spray. Trim any visible fat from chicken breasts,
then put them one at a time inside a heavy plastic bag and pound with meat
mallet until the chicken is as thin as you can get it. Don't worry too much
about the shape or whether there are some loose pieces, you can tuck them in
when you roll up the chicken.
In a small bowl mix together the basil pesto,
sour cream, and grated mozzarella. Use a rubber scraper to spread a thin layer
of this mixture over each chicken breast, stopping about 1/2 inch from the edge
of the chicken (so it doesn't run out so much as it cooks.) Roll up the
chicken breasts and secure them with a couple of toothpicks. (I roll them so
the finished piece is as thin as I can get it so they will cook
quickly.)
Prepare two bowls, one with the beaten egg and
the other with the grated Parmesan-almond flour mixture, seasoned with black
pepper to taste. Dip each chicken breast roll first into the egg mixture and
then into the Parmesan-almond flour mixture, patting it on so the chicken breast
roll is well-coated with the mixture.
Put chicken breasts into the casserole dish and
bake until the chicken is firm and lightly browned. (Start checking after about
25-30 minutes; total baking time will be 30-35 minutes.) Serve hot.

Crock Pot Tortellini Spinach Soup
- 1 - 16 oz. bag frozen cheese tortellini
- 1 bag of fresh spinach
- 2 cans (10.5 oz) Italian style diced tomatoes
- 6 cups chicken broth (I use less sodium version)
- 1 package cream cheese (8 oz.)
- 1 tsp. cumin
- 1 tsp. oregano
- 1 tsp. garlic pepper
- Salt and pepper to taste.
Instructions
- Place all ingredients in the crock pot.
- Make sure cream cheese is cut up in 1 inch cubes before placing in crock pot.
- Cook on HIGH for 3-4 hours stirring occasionally.
- Serve warm.
