Boxed cake mixes are a gift to any busy cook, but it must be admitted that they can be just a tiny bit, well, uninteresting. This isn’t necessarily a bad thing, however. Think of them, rather, as an invitation to creativity.
A boxed cake mix can be the platform for so many interesting recipes. Here is one we’d like to share. Maybe because the original Pineapple Upside Down Cake is such a fussy recipe, we really like this 5-ingredient slow-cooker version.
It’s simple to put together and the results are superb: rich, sweet, and satisfyingly gooey. You may never bother with the from-scratch version again!
 Pineapple Upside Down Cake

Makes 10 servings
Prep Time: 20 minutes
Cooking Time: 4-5 hours
Ideal slow cooker size: 4-qt.
½ cup butter, or margarine, melted
1 cup brown sugar
1 medium-sized can pineapple slices, drained, reserving juice
6-8 maraschino cherries
1 box dry yellow cake mix
1. Combine butter and brown sugar. Spread over bottom of well-greased cooker.
2. Add pineapple slices and place cherries in the center of each one.
3. Prepare cake according to package directions, using pineapple juice for part of liquid. Spoon cake batter into cooker over top fruit.
4. Cover cooker with 2 tea towels and then with its own lid. Cook on High 1 hour, and then on Low 3-4 hours.

Good-For-You Choc-Oat-Chip Cookies

Good-For-You Choc-Oat-Chip Cookies
These Good-For-You Choc-Oat-Chip Cookies are fun to make. Totally easy...totally tasty!

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 1/4 cups packed dark brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup margarine
  • 1/2 cup unsweetened applesauce
  • 2 large egg whites
  • 1 tablespoon vanilla extract
  • 2 1/2 cups quick or old-fashioned oats
  • 1/2 cup chopped nuts
  • 2 cups (12-oz. pkg.) Semi-Sweet Chocolate Morsels

Directions

PREHEAT oven to 375° F. Grease baking sheets.

COMBINE flour, baking soda, cinnamon and salt in small bowl. Beat brown sugar, granulated sugar, margarine and applesauce in large mixer bowl until smooth. Beat in egg whites and vanilla extract. Gradually beat in flour mixture. Stir in oats, morsels and nuts; mix well. Drop by rounded tablespoon onto prepared baking sheets.

BAKE for 9 to 10 minutes for chewy cookies or 12 to 13 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
