Whole Wheat Banana Muffin Recipe – NO white sugar, brown sugar, or white flour


Healthy Banana Muffins cooling before we can take the first bite!
 

 INGREDIENTS:

3 medium ripe bananas
2 eggs
1 cup rolled oats
1 cup wheat flour
1/2 cup honey
1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon kosher salt
1 teaspoon pure vanilla extract

INSTRUCTIONS:
**Hint - grind down the rolled oats in a food processor for a finer consistency

Preheat oven to 325 degrees F
1. Mash bananas in a large mixing bowl  until lumps disappear.  Add eggs, one at a time. Mix well.  Add honey and mix until combined.
2. In a separate bowl, combine flour, oatmeal, salt, baking soda, and cinnamon.
**Hint – I place the oatmeal in my food processor and pulse it to make it more like a powder consistency before I add it to the mixture.  This produces a muffin that is less like an oatmeal muffin, and more like a moist banana muffin.
3. On low speed, add dry mixture a little at a time to the banana mixture.  Once incorporated, add vanilla and mix just until combined.

**Hint – When using wheat flour, it is important to not over-mix your batter.  Over mixing results in dense, thick dough.
4. Place in a lined muffin tin – fill each muffin cup 2/3rd’s full.
5. Bake at 325 degrees F for approximately 20-25 minutes.
6. Cool for a few minutes, then remove to finish cooling on a cooling/baker’s rack.

Lemon-Thyme Tea Bread Recipe

TOTAL TIME:
Prep: 20 min. Bake: 40 min. + cooling
MAKES: 16 servings

Ingredients

3/4 cup milk
 1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
 1/2 cup butter, softened
 1 cup sugar
2 eggs
 2 cups all-purpose flour
 1-1/2 teaspoons baking powder
 1/4 teaspoon salt
 1 tablespoon lemon juice
 1 tablespoon grated lemon peel
 GLAZE:
 1/2 cup confectioners' sugar
 1 tablespoon lemon juice

          

Directions

  1. In a microwave-safe bowl, combine milk and thyme. Microwave, uncovered, on high 1-2 minutes or until bubbly; cover and let stand until cooled to room temperature.
  2. Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder and salt; add to creamed mixture alternately with reserved milk mixture. Stir in lemon juice and peel.
  3. Pour into a greased 9x5-in. loaf pan. Bake 40-45 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before removing from pan to a wire rack.
  4. In a small bowl, combine glaze ingredients until smooth; drizzle over bread. Yield: 1 loaf (16 slices).

Kentucky Fried Chicken Biscuits

 

I think KFC has the best biscuits.. here's their recipe to add to a family breakfast or brunch.

Ingredients

    1. 1 1/2 cups flour
    2. 1 1/2 teaspoons salt
    3. 1 tablespoon sugar
    4. 1 tablespoon baking powder
    5. 2/3 cup milk
    6. 1/3 cup vegetable shortening

Directions

  1. Preheat oven to 425ºF.
  2. Sift together flour, salt, sugar and baking powder into mixing bowl.
  3. Make a well in the flour mix and add the milk.
  4. Add shortening and begin kneading with hands (to cut in) the vegetable shortening and flour in the milk until thoroughly mixed.
  5. Add milk, if needed to form, and mix.
  6. Turn onto floured board, and knead gently 6 to 8 times.
  7. Pat dough to 1/2-inch thickness.
  8. Cut into biscuits.
  9. Place on baking sheet and brown in oven 10-13 minutes.
  10. Makes about 9 biscuits.

Chicken Spaghetti

This easy recipe comes from The Pioneer Woman, Ree Drummond.

Ingredients
  • 1 whole raw chicken, cut into 8 pieces
  • 1 pound thin spaghetti, broken into 2-inch pieces
  • 2 1/2 cups shredded sharp Cheddar
  • 1/4 cup finely diced green bell pepper
  • 1/4 cup finely diced red bell pepper
  • 1 teaspoon seasoned salt
  • 1/8 to 1/4 teaspoon cayenne pepper
  • Two 10 3/4-ounce cans cream of mushroom soup
  • 1 medium onion, finely diced
  • Salt and freshly ground black pepper
Directions
Preheat the oven to 350degrees F.
Bring a large pot of water to a boil. Add the chicken pieces to the boiling water and boil for a few minutes, and then turn the heat to medium-low and simmer, 30 to 45 minutes.

Remove the chicken and 2 cups of the chicken cooking broth from the pot. When the chicken is cool, remove the skin and pick out the meat (a mix of dark and white) to make 2 generous cups. Discard the bones and skin.

Cook the spaghetti in the chicken cooking broth until al dente. Do not overcook. When the spaghetti is cooked, combine with the chicken, 1 1/2 cups of the cheese, the green peppers, red peppers, seasoned salt, cayenne, soup and onions, and sprinkle with salt and pepper. Stir in 1 cup of the reserved chicken cooking broth, adding an additional cup if needed.

Place the mixture in a 9- by 13-inch casserole pan and top with the remaining 1 cup cheese. Bake immediately until bubbly, about 45 minutes. (If the cheese on top starts to get too dark, cover with foil.)

Coconut Flour Banana Nut Bread



Preheat your oven to 300 degrees

Ingredients:
1 1/2 cup very ripe bananas (2-3 bananas)
4 organic eggs
6 TB coconut oil (melted)
6 TB raw honey
1 1/2 TB vanilla
1 cup sifted coconut flour Organic Coconut Flour
1/4 tsp sea salt
1 TB cinnamon
1/2 tsp baking soda
1/2  cup of walnuts and pecan pieces

1. Oil or butter your bread pans
2. Smash the bananas in a bowl
3. Add to bananas the honey, coconut oil, vanilla and eggs.
4. In a separate bowl mix the coconut flour, baking soda, sea salt, cinnamon and nuts.
5. Add the dry ingredients to the wet and stir until just combined.
6. Spoon the batter into your lined bread pans.
7. Bake for 1 hour and 15 minutes. The top and edges should be a golden brown color.

Remove from oven and let it cool for 15 minutes in the pan.

Slice, butter and enjoy :-)

Mash the bananas - I used 3 large bananas
 
I added 4 large eggs laid by my hens
 
 Add 6 Tablespoons of Coconut Oil (melted)
 
6 Tablespoons of Raw Local Honey 
 
1 1/2 TB vanilla (I like Watkins the best)
 
Mix well together
 
In a separate bowl...
 
1 cup Organic Coconut Flour
Sifted
 
Add 1/4 teaspoon of Sea Salt
 
Add 1 Tablespoon of Cinnamon
 
1/2 Teaspoon of  Baking Soda
 
1/2  cup of walnuts and pecan pieces
opps.. (forgot to take walnut pic)
 
mix well by hand... and bake
 
Until top and edges should be a golden brown color.
 
Since I used small bread pans, I baked mine only 45 minutes..
so watch your bread closely, so not to burn it!
