Johnny Carino's Dipping Sauce

If you love Johnny Carino's dipping sauce, I wrote and asked for their recipe. Here is their response:

Toasted Garlic
Chop fresh garlic to around 1/8”. Add extra virgin olive oil to a sauté pan and allow to heat without smoking the oil. Add the chopped garlic to the hot oil and allow the garlic to cook to a light golden brown color. Strain the garlic out of the oil and set aside to cool on a paper towel – garlic will stick together so break up the clumps. Reserve the left-over oil to make the seasoned oil blend below. The garlic can be used immediately or refrigerated/frozen until needed.

Seasoned Oil
Using the garlic infused oil mentioned above, mix in salt, dried oregano, dried basil and black pepper to taste.

Place the toasted garlic onto a service plate and pour the seasoned (well mixed) oil over the garlic. Serve with fresh baked bread for dipping.
